Season Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with the Italian herb blend, garlic powder, salt, and pepper.
Sear Chicken: Heat olive oil in a large non-stick skillet over medium-high heat. Once the oil is hot, add the seasoned chicken breasts to the skillet. Cook for 4-5 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Remove chicken from the skillet and set aside on a plate.
Make Pan Sauce: To the same skillet (do not wipe clean), add the chicken broth and fresh lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the pan with a wooden spoon. Let the sauce reduce slightly for 2-3 minutes.
Finish Sauce: Reduce heat to low and whisk in the tablespoon of butter until melted and the sauce is slightly thickened and glossy. Taste and adjust seasoning if needed.
Combine & Serve: Return the cooked chicken breasts to the skillet, spooning some of the sauce over them. Let them warm through for a minute.
Serve immediately, garnished with fresh parsley and lemon slices if desired. This is one of our favorite quick chicken meals!
